COMPOSITION
Our oil is a blend of three native Tuscan olive varieties: Frantoio, known for its bold, peppery flavor, Leccino, delicate and well-balanced and Moraiolo, intense and full-bodied.
CULTIVATION
Castello di Tornano has approximately 1,500 olive trees, located at an average altitude of 420 meters above sea level.
PRODUCTION
The olive harvest usually takes place in November and is still carried out by hand, in accordance with traditional methods. Once picked, the olives are placed in ventilated crates and taken to the mill within 24 hours to ensure maximum freshness. Cold pressing is used in order to preserve the oil’s natural aromas and flavors. The resulting oil is fragrant and intense. It is filtered and immediately bottled, ready to convey the authenticity and purity of its land through taste.
TASTING NOTES
Our Tuscan Extra Virgin Olive Oil has a bright, intense green color with golden highlights that become more pronounced over time.
Its aroma is rich with fresh olive notes, accompanied by vegetal hints of artichoke and apple. On the palate, it is bold and flavorful, with the taste of ripe olives, savory and spicy, subtly sweet, and with a pleasantly bitter finish. An outstanding companion to traditional Tuscan cuisine.
